One of my favorite things about working at Downes Media is watching a recipe transform from an idea into a mouthwatering dish that people can’t wait to try. That was exactly the case when we created these Apple Stuffed Pork Chops with our talented Food Stylist, Michael McMurtrey, and Photographer, Keira Peterson.
There’s just something comforting about this recipe—thick, juicy pork chops stuffed with caramelized onions, tender apples, and melty cheese, all seared to perfection in a cast iron skillet before finishing in the oven. It’s the kind of dish that feels both impressive and approachable, one you can serve on a busy weeknight or bring out to wow your guests at a dinner party.

Apple Stuffed Pork Chops
Servings: 4
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Ingredients
4 thick-cut bone-in or boneless pork chops (about 1 ½ inches thick)
2 tbsp olive oil or butter
1 medium onion, thinly sliced
2 apples, cored and thinly sliced (Honeycrisp or Gala work well)
1 tbsp brown sugar (optional, for sweetness)
1 tsp fresh thyme (or ½ tsp dried)
Salt and freshly cracked black pepper, to taste
4 slices cheddar or gouda cheese (or your favorite melting cheese)
Instructions
Prepare the Filling
In a skillet over medium heat, add olive oil or butter.
Sauté onions until softened and caramelized, about 8–10 minutes.
Add apple slices, brown sugar (if using), thyme, salt, and pepper. Cook until apples are tender but not mushy, about 5 minutes. Remove from heat.
Prepare the Pork Chops
Preheat oven to 375°F.
Using a sharp knife, carefully cut a deep pocket into the side of each pork chop without slicing all the way through.
Season pork chops generously with salt and pepper on both sides.
Stuff the Pork Chops
Fill each pocket with a spoonful of the onion-apple mixture and a slice of cheese.
Secure with toothpicks if needed to hold the filling inside.
Sear the Pork Chops
Heat a cast iron skillet over medium-high heat with a drizzle of olive oil.
Sear pork chops 2–3 minutes per side until golden brown.
Bake to Finish
Transfer skillet to the preheated oven. Bake 12–15 minutes, until pork reaches an internal temperature of 145°F.
Remove from oven, let rest for 5 minutes, and carefully remove toothpicks.
Serve
Plate the pork chops hot, garnished with fresh onion slices or parsley if desired. Serve with roasted potatoes, green beans, or a crisp salad.
